The Fairmont Hotel Vier Jahreszeiten will introduce a new design restaurant concept called NIKKEI NINE, an innovative Japanese-Peruvian fusion cuisine. 

In the era of global proximity fusion Cuisine stands for the merger of regional and classic dishes and cooking techniques, which are essential and definitive for a region or a country, with extraordinary ingredients from different regions and countries. This interaction of contrast will be particularly thrilling, if there are two continents conflating: NIKKEI CUISINE indicates Japanese cuisine with South American influences, originated by the cuisine of Japanese immigrants who settled in South America. 

Through surprising combinations and intensive flavors NIKKEI cultivates a style, that extends and supplements the Japanese sense of classic-elegant dishes with indigenous South American elements from Peru and Brazil.
